Peanut Butter and Chocolate Banana Muffins

Featured Contributor: Crystal Owens

One of our favorite desserts is banana bread, especially if there are chocolate chips added in. Making several loaves at a time to give away is a great memory I have from my childhood. I remember my mother would let me help her wrap the loaves with a pretty bow on top. I think this is where my love for beautiful gift wrap began. But I’m sure this is where my love for banana bread also came into play.

I recently came across peanut butter chips at the store and knew I
wanted to try to incorporate them into our bread. The combination of
bananas, chocolate chips, and peanut butter is delicious! Since my
children enjoy desserts they can hold I ended up making muffins instead
of a loaf of bread.

Peanut Butter & Chocolate Banana Muffins

  • 1 1/2 cups flour
  • 1/3 cup of melted butter
  • 1/2 cup chocolate chips
  • 1/2 peanut butter chips
  • 1 cup mashed bananas (about 3-4 bananas)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 sugar
  • 1 egg

In a small bowl combine flour, baking soda, salt, and baking powder. Set aside. Mix together bananas, butter, sugar, and egg in a large bowl. Slowly incorporate the flour mixture in. Once the batter is mixed together fold in the peanut butter and chocolate chips. Add batter to a greased muffin tin or use cupcake liners.

Bake at 350 for 18-20 minutes.

I started about 15- 18 mhtons. letting them lick it off a spoon. Both my kids love it, make sure they have a glass of milk to drink, it dries out the mouth. But if your dr said 2 id talk to him about it.,My children got things earlier then I would have started them, My gram kept them on Saturdays when I was on call. My aunt was there too . They fed both of my kids off the table. Like mashed potatoes ect. No wonder my kids hated jar baby food. But it didnt hurt then, and they are not over weight.
