August in my favorite month of the year. Oddly enough, there is really only one reason I love August, it’s mine and my son’s birthday month. Other than that, I don’t like the summer months. (Mainly because its hot. )
August is also a month when most of our kids go back to school and life becomes busy again. We always look for some fast and easy snacks to serve to our kids or to grab ourselves between school and soccer practice.
Ingredients:
Italian bread
1-2 tbs Olive oil, for brushing
4 tbs Grated Parmesan cheese
2 medium tomatoes
10-12 basil leaves
4 oz Fresh Mozzarella cheese
I love this Caprese Bruschetta because of how fast, easy and delicious it is!
All you have to do is cut the Italian bread in half width-wise and lengthwise. Brush it with some olive oil and top it off with Parmesan cheese, tomato, basil and fresh Mozzarella. Pop it in the toaster oven for 10-15 minutes or until the cheese is melted.
