Back to school reminds me of fall – even if it is 100 degrees.
Fall reminds me of apples, and apples are best eaten with caramel.

In an effort to get off on the right foot for back to school, I have been trying to get more creative with breakfast and lunch. At times, even when you enjoy being in the kitchen, you can get stuck in a rut.
I have been experimenting a lot this summer with popovers. They are fun to eat, and much like a pancake, you can dress them up in so many ways.
I don’t have a popover pan, but my muffin tin works great.
My plan was to make an apple pie popover, but again, I love caramel apples. Caramel syrup was not quite what I was looking for – and it would be sticky.
Caramel coffee creamer was just the thing I needed.
I replaced the milk and sugar with caramel creamer…
delicious
with just the right amount of sweet caramel flavor.
Next time I think I’ll wait until a day when it’s a bit cooler:)

Brown Butter Caramel Apple Popovers:
heat the oven to 350
fill each muffin cup with 1/3 tbsp of butter
place it in the oven while you mix the batter
(allow the butter to brown but remove before it burns – about 8 minutes)
whisk together 1 cup of caramel coffee reamer with 3 eggs
add in 1 cup of flour
1 small diced apple
1 tsp vanilla
1 tsp apple pie spice ( or cinnamon/nutmeg)
spoon evenly into your pan
bake @350 for 20 minutes (I get them ready and in the oven and then wake the kids)
By the time we are all dressed and ready, they are on the table.
