I am down 10 pounds since I first started getting serious about eating better. At first it was two steps back and one step forward and though I’m in a better place now, I’m still in process.
As a counselor, that’s one phrase that helps me get through the day–We are all in process. As long as we are here on earth we are ALL still in process, learning, growing, failing and by the grace of God, getting back up to do it all over again.
Here’s my new favorite smoothie, using my favorite fruit of the month–coconut. I go through kicks on fruits and veggies. A few weeks ago it was grapefruit and I couldn’t have enough. I’m still on a cauliflower kick trying to figure out 100’s of ways to eat it. A few weeks ago I made some amazing alfredo sauce using cauliflower–no one in my family figured it out!
What I love about smoothies is that you can enjoy them for breakfast, lunch or a snack and even a dessert.
Piña Colada Green Smoothie
ingredients: (makes 2 servings)
- 1 or2 fresh rings of pineapple
- 1/3 cup coconut milk (fresh is easy–here’s my recipe) NOT the sweetened kind
1 cup water - 1/2 banana (I haven’t been eating sugar so 1/2 was fine for me)
- handful of spinach about 1 cup
3-4 broccoli pieces - 4-6 ice cubes
- shredded coconut unsweetened
optional: Integral collagen (my natural dairy free protein powder)
-1/2 tsp glucomannan (helps with cholesterol but also thickens the shake)
Place all of the above ingredients in a blender and enjoy!
Note: Make sure if you’re not making your own coconut milk that what you’re buying doesn’t have sugar. Also, what I do is freeze the coconut shavings from my homemade coconut milk and use it in my smoothies. Coconut is really good for you!
