My Favorite Light and Fluffy Pancake Recipe

I had to come up with this pancake recipe since  my favorite pancake mix is a bulk recipe. According to the Pancake Man of the house, mixing up a bulk recipe batch is not convenient.

Apparently, when we run out of the bulk pancake mix my husband is in the midst of three little hungry pirates who are threatening to throw him over board.

I had to play with the ingredients from my bulk recipe and the first batch my hubby made was dense and thick but I tweaked some of the ingredients and finally got the right amount of everything for the perfect light and fluffy pancake. Here it is, test and family approved!

My Favorite Light and Fluffy Pancake Recipe

ingredients: makes about 12-15 pancakes (depends on the size you make them)

  • 1.5 cups buttermilk or 1.5 cup milk +2 tablespoons of vinegar
  • 2 eggs
  • 3 tablespoons of melted butter
  • 1.5 cups Flour
  • 1/2 cup oatmeal
  • 2-4 tablespoons brown sugar (if you’re going to use syrup you don’t need 4 tblspns)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

1.  In my small mixing bowl I mix milk and vinegar and let it rest for 5 minutes. (If you don’t have buttermilk.)

2. Then add the eggs, butter to the milk mix.

3. In another medium to large bowl add the flour, baking powder, baking soda, salt and oatmeal. Mix well.

4. Mix in your milk mixture to your flour mixture.

5. I use 1/4 cup scoop for my batter.

6. Pour over a hot griddle.  Let it bubble then flip after 2-3 minutes.

Serve these light and fluffy pancakes warm with butter. These are sweet enough on their own that you don’t need syrup but if you’re family is like mine syrup on pancakes is a must.
