The cake that got me the “Mom of the Year” award —How to Make a Simple and Amazing Birthday Cake Your Kids Will Love
I kept telling myself, “You need to prepare for the boy’s birthday party!”
I said this on Monday, Tuesday, Wednesday… and Friday came.
I still had not baked anything. At this point, it was too late to order a cake. So I ran to the store. I’m usually really good about planning their birthday parties and making their day special.
Well, I couldn’t find two cakes I liked at the store so I came up with this brilliant idea–An Ice cream cake!

I can’t do it all and it’s okay
Let me give you a little background information. I have two boys who were born back to back three years apart. So the party that was scheduled for Saturday was for the both of them and they each wanted their very own cake. Understandable. Well, they actually wanted their own party but I just couldn’t get my act together to pull off one party much less TWO.
Honestly, celebrating is my thing and my love language is details. I love planning and coordinating all of the details of their party. I get giddy about coming up with clever paper invitations. Yes, they have to be real hold in your hand invites. This was a ninja birthday party I threw for one of my boys. I made the cake, invites and the decorations and I LOVED every bit of it!
Needless to say, it was really hard for me this year to swallow my pride and admit– I can do it all.
I’m struggling with keeping all of the balls in the air. We have so much going on and on top of that, we have an international move.
So to my dismay, there was no homemade party, but they did each get their own waffle cake breakfast tradition.
This tired and stressed out mama couldn’t deliver a cool party this year. So I bought a cake box mix for one child and ice cream sandwiches for another and we took 3 of their friends to the local amusement park.
Guess what?
They had a blast!

This cake had all of the kids in awe!
Seriously, I’m not exaggerating.
They were so excited to have ice cream sandwich cake. I was shocked! Here I was feeling a bit embarrassed and these kids were going wild over my 10-minute ice cream cake.
Of course, they all have had cake and some have had ice cream cake. But no one has ever had ice cream sandwich cake!
Ice Cream Sandwich Cake
ingredients:
- a box of ice cream sandwiches
- a tub of frosting
- sprinkles
- candles
I used 15 ice cream sandwiches enough to give each child their own ice cream sandwich.
Then unwrap each sandwich and begin piling them on top of each other. I made four layers that looked like a pyramid.
Next, frost the top layers. You can also frost in between layers.
Finally, light a candle!
Simple goes a long way!
And that’s how I got the mother of the year award! Honestly, if I didn’t enjoy preparing all of the fun details that go into throwing a birthday party I wouldn’t do it.

My kids like the details and appreciate it but they are fine with or without the bling and matching decorations.
Most kids just want to be celebrated and it doesn’t matter if it’s a huge fancy party or not. It doesn’t matter if it’s a homemade cake or store bought one. And it doesn’t even matter if the invitations are electronic invites or not, gasp!
They just want to feel special on that day!
