We have a four-day holiday weekend and that usually means mommy is in the kitchen cooking all day because everyone is home. The upside of that is I get to enjoy them all day. This is one of their favorite foods they request in their lunchbox. This is such a fun and creative way to serve one of their favorite foods, pizza. I happen to come across a picture of bread sticks on a stick and immediately I thought, “Pizza on a stick!”
Unfortunately, for them I am not trying to win the “Mom of the Year Award,” so I don’t wake up at the crack of dawn to prepare their school lunches. Don’t most moms do this? This is me in the morning: at 7 a.m. I open one eye to check and hope the clock says 6:30 a.m. so I can go back to sleep but usually that is not the case. I roll out of my bed, stumbling my way down the stairs, trying to “fix” my hair just in case I run into my hubbie and I begin fixing breakfast and lunch for my 3 growing boys and man. Making cereal and Pb &J in the mornings is hard work.
So what usually ends up happening is I serve this easy meal for dinner with a salad and then I hide the rest, yes I have to hide them so they make it into their school lunchbox. I use the recipe below for my normal pizza dough recipe.
Pizza on a Stick
From my cocina (kitchen) *
1 1/2 c. warm (105-115 degrees) water
1 Tbsp. sugar
1 Tbsp. yeast
1 tsp. salt
2Tbl. Olive Oil
3-4 1/2 c. flour
1/2 c of diced pepperoni
1/2 c of shredded mozzarella
Parmesan
Italian Seasoning
Garlic seasoning
Wooden Skewers
Melted butter
Pizza sauce for dipping
In a large bowl, combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly.
Add salt, olive oil and stir. Add 1 1/2 c. flour and mix well. Add pepperoni, italian seasoning, parmesan, mozzarella and sprinkle garlic seasoning(optional).
Gradually add all the flour until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.
Spray a bowl with cooking spray and place dough in the bowl.
Cover and allow it to rise for 15 minutes.
Remove from bowl and place on a lightly floured surface. Cover a baking sheet with foil for easy clean-up. Roll out dough and brush melted butter and sprinkle Garlic seasoning over it.into a rectangle and cut into 15 strips with a pizza cutter.
Roll dough around skewer and bake 425 for 15 min. Brush melted butter on it and sprinkle parmesan over it. Dip in pizza sauce. YUM!
This makes about 15 large Pizza sticks (I used the long wooden skewers).
