The flavors of Strawberry Bruschetta bursting in your mouth are enough to put a smile on your face. This past week, I served this appetizer as an afterschool snack for my family and I just watched as their eyes got big and listened with delight as they repeatedly said, “Mmmmm. This is so good mom. Yum.”
I had originally took it on our camping trip because I thought it would be a nice healthy snack to share with our friends and family but I had forgotten the bread. I whipped this up at home as we were walking out the door so in the midst of rushing I forgotten a vital ingredient. Dang, I hate when that happens!
The lovely thing about this snack is it’s quick to whip up and it doesn’t involve to many ingredients, all you need is: bread, balsamic vinegar, cheese, olive oil and sweetener, honey or sugar.
Strawberry Bruschetta
- Fresh diced strawberries
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- 1 tsp sweetener, honey or sugar (I use Pyure sweetener)
- crumbled feta cheese (for sprinkling over)
Optional: Sprinkle with fresh mint leaves
Mix all of the above ingredients in a bowl and then top with feta and mint.
