I’m on my third day of 30 days of Eating Better and I was ready for a sweet treat but I also didn’t want to bomb all of my efforts by indulging in something that I would regret later. So I came up with this recipe and I would’ve eaten all 6 popsicles by myself. Don’t worry, I didn’t.
The ingredients have good and real fat like avocado and coconut milk. Don’t be afraid of this kind of fat, as long you’re eating it in moderation. Avocado, cacoa and coconut are jammed packed with nutrients so make sure to enjoy them!
I made two kind: plain chocolate and peanut butter chocolate. I’m a peanut butter lover so that’s what I indulged in.
After my kids and hubby devoured their fudgsicles I asked them if they could figure out what was in it. No one guessed it was healthy, bwa ha, ha, ha, ha, ha! I was so excited that they didn’t realize that it was healthy especially my husband who most likely wouldn’t have eaten if I had told him there was avocado in it. I love when I can trick them eating something healthy! I can’t wait to try other concoctions!
If you’re wondering what the difference is between cacoa and cocoa here it is: “Cacao is the purest form of chocolate you can consume, which means it is raw and much less processed than cocoa powder or chocolate bars. Cacao is thought to be the highest source of antioxidants of all foods and the highest source of magnesium of all foods. It has been used throughout many cultures for years for health purposes and even used as a high trade commodity.” via One Green Planet Though it’s similar to cocoa powder it’s definitely different in taste and nutrients since you can find fiber, protein, vitamins and minerals in Cacoa.
Amazing Creamy Chocolate Fudgesicles
- 2 bananas
- 2 tbl cacoa powder (not cocoa powder like Hershey’s)
- Avocado wedge
- 1 cup of coconut milk
- sweetner of choice but not white sugar I used 2/4 tsp of stevia
Optional: 2 tbl natural peanut butter
1. Place all of the above ingredients in a blender.
2. Pour in popsicle molds or disposable cups and freeze!
Note you may not even need the sugar because the bananas may just make it sweet enough. So taste check it and add accordingly.
Also, note that the avocado is what makes these fudgesicles super creamy and thick!
