My kids love when they see ripe bananas on our kitchen counter because it usually means I’ll be making some kind of baked banana treat for them. I wouldn’t be surprised if they plotted out to purposely leave 3 ripe bananas every time I buy a bunch.
This recipe is sugar free (refined sugar)! It’s dairy free and grain free! I can personally vouch that it’s oh so very delicious, even with all those “free” labels attached to it. It’s not just healthy it’s moist and rich in flavor.
We enjoyed it for breakfast and a mid-day snack. And it’s looking like we may also be having it for dessert after dinner.

Chocolate Chunk Peanut Butter Banana Bread {Healthy}
- 3 bananas
- 2 eggs
- 3 tablespoons of your favorite sweetener (I used Erythritol natural sweetener)
- 1/4 cup peanut butter (preferably natural peanut butter)
- 4 tablespoons coconut oil, melted
- ½ cup coconut flour
- 1 cup oats (gluten free)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla or cinnamon extract
- pinch of sea salt
- 4-6 oz 70% or more dark chocolate chunks (use dairy free chocolate chips or leave them out)
Grease your loaf pan.
Mix the first 5 ingredients in a bowl until it’s somewhat creamy. I couldn’t get my natural peanut butter to a creamy consistency.
Add in the rest of the ingredients and mix well. Then add your dark chocolate chunks.
Pour into greased loaf pan and bake for approximately 45 minutes or until a toothpick comes out clean.
Let it cool in pan for 20 minutes and then you can turn it over onto your plate!
