I love broccoli salad but I avoided it for some time because it was loaded with this delicious creamy dressing. That is until I figured out that I could substitute all the mayo with some greek yogurt to make it healthier. I do this for all of my creamy dressings, I mix in greek yogurt instead.
Anyways my husband is the grill master! He makes an amazing burger and it has to be amazing for someone who eats very little beef to say this. One of my easy sides to make with his burgers is a cold salad. I usually make this broccoli salad or another of my all time favorites–Ramen Asian Coleslaw Salad with his burgers.
Broccoli Cranberry Apple Salad
- 2 broccoli heads chopped
- ½ cup shredded carrots
- red onion about a quarter diced
- 1 apple
- ½ cup pecans chopped
- ½ cup dried cranberries
Creamy dressing:
- 4 tablespoons mayonnaise
- ½ cup low fat greek yogurt
- 2 Tablespoons lemon juice
- 1 Tablespoon honey or maple syrup (or sugar)
- salt and pepper to taste
So start off by making your dressing. Mix all of the above dressing ingredients in a bowl and set aside.
Then take all of your other ingredients for the salad and place in a large bowl. Then add your creamy dressing to the salad and serve cold!
