Going gluten free in S. America is definitely not an easy task. I’ve been experimenting with different recipes trying to find what I like and this recipe has become my go to because it tastier and more soft–not dense.
The oats gives it a slight nutty flavor that I like. Try it and see if you like it, I LOVE it! As you can see from the picture above you can enjoy it for breakfast and any other meal lunch or dinner as a snack. I make my egg muffins with this bread now but I do have another recipe here that I was using for a while. You can toast it and just spread some peanut butter on it for a snack.
Bread in a Mug
ingredients
- 2 tablespoons oat flour (place rolled oats or old fashion oats in a blender)
- 2 tablespoons flax meal (if you live in Latin America it’s called Linaza, for us it’s grounded in the cereal aisle.)
- 1 tsp baking powder
- 1 egg
- 1 tsp coconut oil or butter, melted
- pinch of salt
Place all of the above ingredients in a mug or a bowl but first place the dry ingredients in your mug and then mix it well. Then add your wet ingredients and mix well.
Then microwave it for 1-1.5 minutes. My microwave only needs one minute.
Note, I don’t grease my mug and it never sticks for me.
