Anybody else trying to make better eating choices this new year?

I am, especially after my doctor visit today. I’m sad to report that I gained 4 pounds over the holidays (insert bummed face with pouty lips sticking out).

I was quite disappointed since I had just lost 10 pounds before the holidays kicked off but alas this is the time to seize my eating habits.

Here’s my healthy and mouth watering lunch I enjoyed today. It was seriously AHHHHMAZING!  I was originally going to make a BLT Avocado salad but this is what I ended up with after my creative skills kicked in.

Avocado is actually good for you

Avocado fat is good fat. Eating an avocado is an excellent way to add good fat and fiber to your diet.

I read somewhere that avocados help lower your cholesterol and it’s a hearty food that helps you feel full. For some reason, I’ve always thought this fruit was not good for our body because it’s high in fat and calories, but it’s actually good fat.  Just don’t splurge on it!

Though it’s good fat, it doesn’t mean that you can eat 2 -3 avocados a day. At least my body type can’t over indulge on avocados. Another thing to kee in mind if you’re trying to lose weight is not to mix high-fat foods with high in carbs foods. So I would not eat guacamole (a healthy food) with a whole bag of chips.

 

Avocado Salad Boats: BZT {Bacon, Zucchini and Tomato} with Garlic Lemon Vinaigrette

Ingredients:

  • 1cp of grated zucchini
  • 1/2 cp of halved cherry tomatoes
  • 1/2 cp diced cucumbers
  • parmesan cheese sprinkled
  • garlic lemon vinaigrette (see below for recipe)
  • 3 slices of bacon crumbled up

1. Toss all the ingredients together and pour dressing over it.

Garlic Lemon Vinaigrette

  • 1/3 cup olive oil
  • 3 Tbl red wine vinegar
  • 1 tsp of garlic paste or 1 finely minced garlic clove
  • 1 tsp dried oregano
  • 1/2 tsp sugar (I used stevia)
  • 1/4 tsp salt (I used sea salt)
  • 1/4 tsp. black pepper
  • lemon juice from one large lemon

Mix all of the ingredients in a small jar and shake well.  You will have definitely have plenty left of salad dressing left over for another day.

It’s a Filling lunch!

So today I chose to enjoy 1/2 an avocado for my lunch and it’s now 4 p.m and I’m still not hungry. The BZT filling was enough for 1 whole avocado so I just enjoyed the rest without an avocado bowl. This recipe would also make a perfect party appetizer.
