Green Monster Smoothie or Shamrock Smoothie

We call this the Green Monster smoothie in my house and with March approaching it’s also called the Shamrock Smoothie. The Green Monster name get’s my kids excited and they think it’s funny to sip a Shamrock smoothie and the great thing of it all is they are drinking the same smoothie, he, he, he (I know I am a genius).

First time I served it, everyone enjoyed it but my finicky eater.  My 5 year old said, “This is yummy.” Then he takes another sip and says, “I don’t like it.”  He drinks some more and then says, “I like it.”   Seriously, he drank the whole thing with no problem after I told him it’s a Green Monster shake. Sometimes we have to get creative around our house to convince this little guy that he likes something. So much of it is in his head, he looks at something or smells something and decides without tasting it that he doesn’t like it.

Well, I love all things green apple especially Jolly Ranchers. This shake was the right amount of sweet and you can’t go wrong with the hint of green apple, so refreshing. Apples and spinach are a great combo to get fueled for you day! This nutritious, vitamin packed drink is a delicious way to boost your health! We had this with our healthy egg muffins so we were definitely ready to start our day.

“Green Monster Smoothie” or “Shamrock Smoothie”

Ingredients:

  • 2cps of greek plain or vanilla yogurt
  • 1/2 cp of milk or coconut or almond milk
  • 1/2 cp of apple juice
  • 2 handfuls of spinach
  • 1.5 green apples chopped
  • 1 banana
  • 1 tbsn honey
  • 2-3 cps of ice (we like ours crunchy)

1. Mix all of the ingredients above in a blender and your set! If you want it a bit sweeter add more honey or sugar and use vanilla yogurt instead of plain greek yogurt.

I read somewhere to add dates to it. I haven’t tried it but I wanted to throw that out there.

This served 4 med/large glasses.
