Summer means I am in the kitchen a lot more because I have a full house. My husband and my three boys are counting down the minutes for me to serve lunch. I always struggle with this change because when school is in, all I do is make myself a little something and I am good but now it means I am in the kitchen for at least an hour preparing, making and cleaning up.
So to simplify my life I try to find easy recipes for them to enjoy during lunch that don’t require much from me. We use our grilled cheese maker TONS in the summer.
Here’s an easy and delicious way to take your ordinary grilled cheese sandwich to another level.
Grilled Pepperoni Pizza Sandwich
- bread
- pepperoni pizza
- pizza sauce
- mozzarella cheese
- spinach
1. Spread pizza sauce over a piece of bread. Don’t put too much otherwise it will be soggy.
2. Place a few slices of cheese on a piece of bread then top with pepperoni and spinach.
3. Spread butter over the outside slices of bread and lay on a hot griddle or your grilled cheese maker.
Eat warm with extra pizza sauce for dipping.
