This month we will stop by my beloved country, Mexico, for our Kid Friendly Meal! Even though this meal is not a traditional dish it’s packed with all of our wonderful spices and ingredients, that make our dishes, mouth watering!
Every time my son sees me in the kitchen making dinner and the tortillas are out he asks “Mommy are you making those yummy bowl things that I love?” When I say “Yes!”, he runs out of the kitchen with excitement. I am not exaggerating he loves this dish, it’s a family favorite. I especially love the colors in this meal!
Your mouth will have a fiesta with the flavor combinations in this dish!
Tortilla Bowls w/ Mango Chicken Salad
This recipe was adapted from the Pilsbury Bake Off submission by Frances Pietsch.
Bowls
4 flour tortillas
1/2teaspoon ground cumin
1/2teaspoon salt
Oil for brushing or cooking spray
Salad
4 cps cubed or shredded chicken
1.5 cps diced and peeled mango
1tbl fresh lime juice
1.5 cps diced peeled avocado
1/2 cp chopped red bell pepper
1/2 cp chopped red onion
1/4cp of chopped fresh cilantro
1 cp shredded lettuce
1/2tsp salt
Vinaigrette
When I am short on time I just use ranch dressing with 2tbl of taco seasoning added to it.
2 tbl mango nectar
1tbl white wine vinegar
1 tbl fresh lime juice
1 tbl fresh orange juice
1 tbl honey
1/3 cp Canola Oil
1 Heat oven to 400°F. Use cooking spray or brush oil on tortillas.
2. Sprinkle cumin and 1/2 teaspoon salt evenly over sprayed sides of tortillas. Press tortillas, seasoned sides up, in bowls and place in oven 5 to 7 min or until semi crispy. See above mine are just folded like a cone into the ramekins or you can use muffin tins.
3. In food processor bowl with metal blade or blender, place all vinaigrette ingredients except oil. Cover; process until smooth. With food processor running, slowly pour oil through feed tube until mixture is thickened. Set aside. When I am lazy I use ranch dressing.
4. In large bowl, mix chicken, mango, lime juice, avocado and remaining ingredients.
5. To serve, spoon chicken salad into tortilla bowls. (Bowls will be full.) Serve with sour cream!
This is one of my favorite recipes to pass on to new brides at showers when they ask us old marrieds to share a recipe. It’s a great recipe to impress their man with, it’s so easy to prepare and the presentation is so eye-catching!
You’re not going to believe this but when I came out of the kitchen my son was playing with these toys, he could smell the Latin flair in the air!
