I don’t eat beef very much so I have a hard time coming up with creative beef recipes. I make the typical beef meals: hamburgers, meatballs, tamale pie, tacos- and well I think that’s all. So I went searching online for some more ideas and I came across this super easy recipe called Korean Beef.
If you’ve followed me sometime you know that we like to cook kid friendly recipes from around the world for our family of five. I use these recipes as way to introduce my children and their palates to different flavors and cultures from around the world.
Korean Beef using ground beef
ingredients:
- 1 pound of lean ground beef
- 1/4 cp soy sauce
- 2 tbl rice vinegar
- 1/4 cp brown sugar
- 4 cloves garlic minced
- 1 tsp ginger minced
- 1 tbl sesame oil
- small head of broccoli
- toasted sesame seeds
pickled coleslaw
- 1/2 onion sliced
- 1 cp of shredded carrots
- 1/3 cp rice vinegar
- 2 tbl diced cilantro
- 2 tbl sesame oil
- lime juice from 1 lime
- shredded ginger
1. Cook ground beef.
2. Mix the rest of the ingredients in a small bowl (except sesame seeds) and add it to the beef while it’s cooking.
3. Drain the fat. Set aside.
Pickled coleslaw
1. Place all of the above ingredients in a small saucepan and cook over medium heat until the onions are soft.
Serve the beef over rice and top with toasted sesame seeds and coleslaw.
