There are MANY reasons why I love the summer.
sleeping in
lazy afternoons around the pool
the warm evening breeze
but mostly it’s because I LOVE meals cooked outside
While my husband is one to grill year round, during the summer months we grill daily.
We have even started to grill our salads (of the green and leafy variety).
This is one of my favorite summer meals. It’s quick and easy to put together, nutritious (especially if you use an all-natural chicken or turkey sausage), and except for the orzo, the entire meal can be done on the grill.
Grilled Sausage with Peppers and Orzo:
5 sausage links (kids seem to prefer the chicken apple)
red, yellow, and orange bell peppers
1 large red onion
orzo (cooked according to the package)
slice the veggies (remember that the smaller the pieces the harder they are to grill)
cook sausages over a med-high grill
at about the halfway point, add on the veggies (we usually arrange them around the outside of the grill)
grill until the sausages are cooked through and the veggies are a bit charred
top the orzo with your meat and veggies
and because you can never have enough cheese, I like to add a few ounces of diced fresh mozzarella and a drizzle of balsamic vinegar (completely optional – but delicious.)
