Chocolate Covered Frozen Peanut Butter Banana Mini Sandwiches

I know the title is a mouth full but you will be happy you stopped by here when your mouth is full of this yumminess. One of my favorite ways to eat peanut butter sandwiches when I was a kid was to slap some banana slices over wheat bread and sprinkle honey over it!  That combo I could claim as healthy but not my adult version of this sandwich, Chocolate Covered Peanut Butter and Bananas.   This is a fun snack for the kiddos or it can be served as a party food.  If you are sending it in their lunch box, I would suggest you not freeze them.  This fabulous little treat was featured in the Simply Summer Issue.

Chocolate Covered Peanut Butter and Banana Mini Sandwiches

  • Graham crackers
  • sliced Bananas
  • Peanut butter
  • Chocolate for melting

Spread some peanut butter over the crackers and top it with a banana slice and place another cracker over that.

Once your chocolate has melted, dip your sandwich or spoon some chocolate over your sandwich if that is easier. Place on wax paper and freeze or just set it in a cool place to harden.

Enjoy!
