Amazing Gluten Free Turtle Brownies

I’m seriously flabbergasted at how good these gluten free brownies turned out.   It’s my first try at baking gluten free and I was greatly encouraged. I’m not bragging, I’m in shock!

My husband decided over the holidays to go gluten free so I’ve been doing much “research” on this topic and every time I walk away from my reading, I feel overwhelmed.  But I’m glad I tried something easy for my first try at baking.  I love my brownies chewy on the inside and crusty on the outside and these turned out just like that! Warning I did tweak this recipe the 2nd time I made them and it was a complete fail. So tweak at your own risk.

Though I must warn you that they were slightly crumbly when warm. I could definitely pick it up with my fingers but not the whole large square piece that I served myself, without the edges falling apart. But when I made them smaller and let them cool it was perfect for holding.

Amazing Gluten Free Turtle Brownies

1/2 cup white sugar
1 cup brown sugar
3/4 cup vegetable oil
1 cup of bean flour (your favorite, preferably mild flavored) if you live in Ecuador it says Harina de Habas
4 large eggs
2 teaspoons vanilla
1 1/2 cup cocoa powder
1/4 teaspoon sea salt
1/2 cup chocolate chips
1/2 cup chopped pecans
1/4 cup warm caramel sauce
Directions:
Preheat the oven to 350°F. Lightly grease a 9×13 inch baking pan.
1. Combine the sugars and oil.
2. Add in the eggs and vanilla whisk together. Beat for about two minutes.
3. In another bowl stir together the cocoa, bean flour and salt.
4. Add the dry ingredients to the batter  and mix.
5. Add the chocolate chips and pour into prepared pan and bake about 25 minutes.
6. Drizzle warm caramel sauce over brownies and then add chopped pecans.
Note: If for some crazy reason you’re not into “Turtle” flavored stuff then exclude the caramel and pecans.
