Out of all three meals, lunch is the hardest for me to get creative with. Or maybe I’m just so busy in the middle of the day I don’t have time to get creative. I was thinking through what I wanted to make and Tuna came to mind but I didn’t want just another traditional tuna salad sandwich.
So this is what I came up with Curried Tuna Salad on mini pita bread. It was delicious and healthy. I also put some tuna on cucumbers instead of pita bread.
Simple.
Delicious.
Healthy.
Curried Tuna Salad
- 1 can of tuna drained
- 1/4 cup of greek yogurt
- 1 tablespoon of mayonnaise
- 1 tablespoon of curry powder
- 1 teaspoon of turmeric
- 1 teaspoon of roasted ground coriander
- 1 celery stalk diced
- 1 apple diced
- raisins (optional)
Mix all of the above ingredients in a bowl and serve over pita bread or naan.
For a non-grain alternative use cucumbers instead of pita!
