Zucchini Pizza Bites (How to Avoid Soggy Pepperoni Bites)

These Zuchinni Pizza Bites or I’ve also heard them called Pepperoni bites are aaaahmazing.  It’s my new favorite go to lunch snack!  It’s fast, delicious and healthy!  I’ve been trying to eat healthier but I keep getting off track so I’ve started up again this week. Since I haven’t been eating healthy for the past couple of weeks I’m needing to detox my body from carbs and sugars so I’m eliminating them from my diet for a few days.

I started my day today with a good run. I also remembered to have breakfast since I usually don’t have this meal a hard boiled egg with watermelon and some tea was more than enough for me.  This usually keeps me energized until 10:30 when I have a protein shake.  I think I might make a chicken Chile Relleno Casserole (with a n0 carb section for me).

As you know I enjoy cooking with my kids and I highly recommend this recipe to have them try to make on their own. It’s a perfect afterschool snack!

Zucchini Pizza Bites

  • Zucchini slices
  • Pepperoni
  • Mozzarella cheese

salt to taste

1. Place your zucchini slices and pepperoni on a griddle or on something big enough to fit all of them on medium heat.  Your pepperoni will cook faster than the zucchini.

2. Flip over your zucchini slices after they are slightly brown on one side. Then place the mozzarella slices on the zucchini and top with pepperoni.

3. Leave them on the griddle until slightly brown and take them off! Add salt to taste if you wish.

How To Avoid Soggy Pepperoni Bites:

The thicker your zucchini slices are, the harder it is to take the moisture out of them so if you do choose to cut chunky, thick slices you will end up with “soggy” zuchinni slices unless you bake them for a really long time on really low heat. Also, they shrink when cooked so don’t cut them too thin.

If you do cut them really thin make sure you keep an eye on them because they will brown really fast. I make mind medium size about 1/2 an inch.
