Consider yourself warned–you can’t just take a couple of bites of this Easy Raspberry Cheesecake Cups! I’ve been searching for healthy ways to satisfy my sweet tooth cravings without throwing out all of my hard work with one bite. Some of my experiments haven’t been so tasty but this was is delish!
This is so pretty it’s perfect for your Valentine’s Day dessert or party!
Easy Raspberry Cheesecake Cups {Healthy Dessert}
ingredients:
- 1/2 cup Greek yogurt plain
- 1/2 cup Greek yogurt lemon flavored or vanilla
- 2 tblspns low-fat cream cheese
- lemon extract (optional)
- 2 tspns of your favorite sweetner that’s not white sugar (I used Stevia)
- raspberries
- Optional: 1 crushed graham cracker as a topping
Mix all of the above ingredients in a medium size bowl. I used my immersion blender.
Place in the fridge or freezer for 10 minutes.
Meanwhile chop up your raspberries and then gently mix them into your cream cheese mixture.
Place in a cup and top with 70 % chocolate shavings. I also added 2 crushed almonds to the mix!!! It was absolutely amazing. Or you can top it with 1 crushed graham cracker to give it more of a cheesecake feel.
